Andrew,
I have a question...given your quote below...
I have seen black generation in some profiles that don't even start to
produce any black until you pass 25%. There are some that only produce
a "Light" key channel.
Are you sure that this type of CMYK profile would make good greyscale
images using the black channel only?
Is there something I am missing or it this not a good idea?

If you have a good CMYK profile for the process, you can load it into
the Grayscale working space (in color settings, Load Gray) and use it’s
black generation to convert.
