I doubt iPhoto is converting your images, or reassigning their profile in this situation. But I am wondering why you're converting to Adobe RGB once you bring the photos into Photoshop? If you're assuming the source is sRGB and converting to Adobe RGB, you're not gaining anything unless you're really editing the hell out of the images in order to push in some colors that don't exist in sRGB but do exist in Adobe RGB.
