There's a very nice Remove button in PrintCenter - click on it when a
printer is selected and it disappears, as most of us have found out to
our chagrin at one point or another :(
Anyway, you don' need to or want to fully remove the Gimp (Gutenprint)
drivers from the system - AFAIK that's only necessary if you want to
change the GIMP drivers themselves. Just use the trick above to make
whatever Epson printer is selected at the moment "disappear". Then
download and install the Epson drivers from the Epson site. Finally
use PrintCenter or Printer Setup Utility to actually create the
appropriate queue (remember to give it a moment to detect the new
driver files, and remember that you need to pulldown the Epson USB
item).
Last, not least, 2100 Epson drivers on Macs get corrupted a lot, I
call it Epson Horrible Print Syndrome (EHPS). I've seen it with my
clients and at home, I profile and they print fine, they're happy,
they do their work and then sometime later, maybe one or two weeks,
suddenly *bang* the printer is printing green or simply dreadful.
