My two cents here. As you know, these three Gamut Mapping choices only apply
to Perceptual. As for the differences between each one, all I can say is
that "Logo Classic" came in first, in v3, followed by "Chroma Plus" in v4
and then followed by "Colorful" in v5.
I tend to think that each new gamut mapping method allowed mapping out of
gamut saturated colors closer and closer to the outer boudary of the device
gamut, selectively or intelligently desaturating colors instead of globally
desaturating colors by the same amount, as was used to be done in the past.
