Thanks for the reply. I like this option for its obvious simplicity but I am unsure about
a couple of issues.
If the workflow starts as a selection of Pantone swatches in Illustrator, which I
understand are CMYK, and then saved as a pdf with a CMYK profile embedded. I
cannot get my head around how to then print to an ink-jet printer which is profiled as
an RGB device? I would appreciate some help here.

Will it have to be an RGB profile, given there will be no RIP?

I like that suggestion but again I'm not convinced that a PDF-X/3 with a CMYK
profile embedded will print accurately to an ink-jet that has been profiled as an
RGB device.
I would appreciate your thoughts on this scenario.
