While playing around with ColorThink, I noticed that, if I graph AdobeRGB

There are no colours in Adobe98 that are out side of ProPhoto, the issue is
A98 is D65 and ProPhoto is D50, and this is not being accurately allowed for
in ColorThink 2.1.2.
Sounds like ColorThink is being entirely accurate. If two profiles have
different white points, then one device gamuts is not likely
to entirely overlap the other (not unless one profile is running
with a non-full brightness white point). Whether the conventional
meaning of "gamut" (which I take to be the range of CIE values a device
can reproduce) is what is meaningful to users in this context, is
an interesting point. I would guess that what you are pointing out
is that if ColorThink had an option of comparing white point matched
gamuts, then ProPhoto would entirely overlap Adobe98.
