Wouldn't it be possible to simply enter the relevant numbers for (in this instance) U.S. Web Coated (SWOP) v2 as a legacy custom CMYK setup then alter at will?
If not readily available I'm sure they could be derived.
I'm not saying it's a great idea, but if you like the old CMYK setup anyway, you're unlikely to have a problem with this either...
