Can someone tell me which dot gain settings or icc profiles I should
use for the grayscale (and spotcolor) working space in combination

ISOuncoated.icc;
ISOuncoatedyellowish.icc;
ISOcofcoated.icc;
ISOcofuncoated.icc.
How about using the tonal response of the black printer of those
profiles as the grayscale profile...in Photoshop, for your grayscale
profile, select Load Gray (allowed only with advanced settings
selected) and select an ECI ICC profile and it will be added as
"Black Ink - x" to your grayscale profile list.
Mike is completely right. Just to add: ...and do a save of the profile
afterwards just in
case you need the profile in another app or RIP.
