Hi AJ,
InDesign makes this a bit difficult because it does not support
grayscale.
Grayscale work happens to be my thing and QTR has several grayscale ICC
capabilities. There are several color-only products so I can also make
RGB icc profiles
with R=G=B i.e. gray in color. I'd be glad to send you a dummy
rgb-to-gray profile.
What you can do with this is Soft Proof with it and see the image turn
to gray.
Then if you want to print it as gray, in the ColMgt dialog select Proof
instead of Source.
Below you can select ordinary ICC profiles for the standard color
printing workflow.
If you want to get fancier than that, you can print grayscale with QTR
or Epson ABW.
Then it's possible to make full soft-proofing (including hue) and
printing grayscale ICC profiles
with all the same benefits and features as a color CM workflow.

profile to grayscale and be to view, print, export the result.
A followup question would be how easy/safe it would be to flip the
profile back to its original (typically Adobe98).
Any info about this would be great, including info that this is just a
dumb/bad idea.
