Have you talked with the printer that will be doing the job? If the job is simply 3 spot colors and there are no contones/images that need to be separated for the 3 spot colors, you probably don't need a profile at all. You would simply want to set your Spot Color dot gain setting in the various Adobe apps to something appropriate for flexo printing. Even if the printer does not have a profile for you, they should be able to tell what sort of dot gain to expect (probably around 30-40% for flexo but I'm guessing).

As for screen angles, if you're simply providing them the file for them to output, I'd let them choose the screen angles that would be most appropriate for the job. They should be the experts after all.
