We are confronted with a significant drop of brightner when we laminate our
paper. The colour that we proofed become darker and more with a red tint
inside. Of course the paper is yellower too. Is there a way  to measure this
colour shift?

If you print and laminate your profiling target prior to measuring it, the final profile will allow you to proof the final product.
