Well, you could linearize it, and create a fixed preview of that state as well, in AWB mode with the CreateICC tool that ships with QuadToneRIP. Or you could build an Extended Grays profile for it with PrintFIX PRO 2.0, and continue printing in color mode. Or you could keep on doing what you're doing, if its working for you. There is no mode for using only the black and gray inks, and it wouldn't be neutral or controlable if there was.
