So, their output substrate simulation goes all the way to the very edges? No
areas are left untouched? Even one small area of pure untouched white paper
will skew the viewer's perception.

Yes, if one (a) can find a substrate that matches the output, (b) can print
on it using an inkjet, and (c) the gamut achieved is larger than the output
gamut (which is a necessary condition for color proofing).
