The simulation will extend to the page size that you sent to the Rip. If, for example, you send a 12"x 18" quark page, your simulation will be 12" x 18", plus additional for the calibration strip if you chose to include one. Some printers allow edge to edge printing (Epson models) so you could make you page size the full width of the roll and choose borderless printing to eliminate any white borders, but you'd still have to trim top and bottom.
