Rich,

How will I be able to tell I am looking at an "optically brightnened" proof?

Well, your eyes are gonna' pick up on the brighteners.

It's not so much that you can tell that you are looking at paper containing brighteners. The brighteners do, however, contribute to your perception of the paper color and brightness. If you fill a Photoshop document with the colors from the measurements, I think the "non-UV" color will look more appropriate.
