EPS and Onyx?

I wonder if I could get some input or discussion from the folks here about EPS files and Onyx. In particular in this case Onyx 6.5.

What I'm finding is that even with Onyx presets defined to accept embedded CMYK profiles, or absent an embedded CMYK profile to assume SWOP both in vector and image files, that color does not display in Preflight or print as it displayed soft-proofed in the original application, be it either Illustrator, or Corel Draw.

I've gotten contradictory answers in the past from people who should supposedly know...since there is box to check in the Illustrator save menu, does an EPS embed a profile, or not? And if not, what's a good method to use to get from Illustrator to Onyx via EPS? And if it does, why am I getting this anomaly?
