If you are using ColorThink 2.x then it might be because 2.x does not directly convert CMYK images for graphing. It gets the CMYK from Quicktime, which converts it internally... although it usually does a pretty good job for 'illustration' purposes...
If you are using ColorThink Pro it will open the image and graph unique Lab values... but there is the possibility that it uses relative colorimetric to calculate Lab, which will pull the colors up and outside of the default absolute colorimetric profile gamut...
so, which version are you using?
