They should be able to do it better than displays without hardward
calibration, but Eizo's were designed to match AdobeRGB1998.
If you are planning to purchase a display specifically to soft proof
CMYK then you should take a look at Quato:

They supply their displays with a litho test sheet so that you can
judge the soft proof accuracy to ISO Coated.
The iColor calibration software also includes Ugra display
certification tools which create very thorough reports like this one:

We purchased a couple of Intelli Proof 230s last year after using
demo units of both the Eizo and Quato displays. Most of the jobs that
we soft proof on them are output in-house as Fogra certified contract
proofs - so we expect, and get, a good match to ISO Coated and ISO Web.
