Photoshop 7+ interprets them and treats Images with EXIF Colorspace tags but without embedded Profiles as if there were a profile embedded: it assigns the corresponding ICC-Profile and you can embed it when saving.

E.g. an image with exif colorspace tag "sRGB" will be displayed in Photoshop as sRGB but in Preview as Generic RGB (the default for Images without Profiles)
