Having trained and implement this many times, I can tell you that it’s as easy as taking measurement in Visual Density for K and densities for each CMY values of the gray bar (C50 M40 Y40). You just have to set your densitometer to "ALL values" so that you have all the 4 densities, then, when you read the gray balance you check the densities of Cyan, mag and Yellow to see if they match the reference density (.54 or ex. .60 paper included). If all values are the same and are at he the proper Tone density, RUN! I made such setup in a printing plant, with 3 offset presses, 10 different pressman. Now they run to gray balance. Pressman are very happy to run like described above.

Figuring out what to do with the black is straightforward and is achieved with a good old densitometer. But figuring out what to do with CMY proves to be a challenge. Really. Having adopted the nominal a* and b* defaults of 0 and -2 for Gray Tone Aims, printer X now wonders how to instruct its pressmen to control gray balance on press the way they used to do it, very successfully, with simultaneous measurements on the red, green and blue StatusT filters? Nothing in the G7 documentation seems to covers this part of the G7 method.
Will printer X have to buy 528s for all its presses, all of a sudden?
