What you are looking for are the device profiles which for your printer on a Mac are installed as a group within a single plug-in at:
Library/Printers/EPSON/SPro7800.plugin -
BUT if you delete the plug-in, you may experience problems with the driver, so I would proceed with this with a great deal of caution.
