There are two processes going on here:
1) The rendering "look" imparted in the conversion from sensor signals to the
color space (color image encoding). The matrix settings, in part, determine
the rendering.
2) Once the color rendering matrix has been applied, a separate camera mode
setting (sRGB, AdobeRGB, etc) outputs the rendered image in whatever color
space you chose.
