Brian,

Thank's for taking the pain to clarify what happened.

It really boils down to how every object is actually tagged in the PDF.
PostScript does not support ICC profiles, never did, never will. So
outputting straight to PostScript would have avoided any further conversions
downstream but no one uses that workflow anymore. The trend, and for good
economic reasons, is to go PDF. And as you outlined it so well in your
comments, PDF comes with its own set of color management rules, because
Adobe gave it full ICC profile support. It's like a loaded gun.

It is crystal clear what happened, though. Really appreciate these follow-up
comments.

I suppose the same thing could have happened from Quark?
