I think you're referring to the handling of placed files as they're brought in. I was referring to output. There isn't an "Ignore Linked Profiles" option for output.
Wouldn't it be nice to be able to say, "Assume this profile for untagged RGB, assume this profile for untagged CMYK", "Handle RGB this way, handle CMYK this way, oh and please protect K-only elements" - "Embedded profiles override assumed profiles"?
I think the Proof option would be nicer decoupled from the View menu.

Agreed.
The point with untagged CMYK, for me, is to avoid anything unexpected in the RIP. Some front-ends can't be stopped from acting on ICC profiles. That can result in double conversions, if you've handled everything upstream, or the CMM may not be great.
