I will be using Monaco Profiler Platinum v4.8 and a DTP70 to read and profile the IT8.7/4.
I'll have them print one of the G7 forms with images and targets. Is this what you meant by more than just a IT8.7/4 target?

I would recommend using the 2989 patch in Monaco Profiler. That is the largest target set that works with Monaco and has almost double the number of patches as the IT8.7/4. That is what I ALWAYS use when characterizing devices, as I get better overall gray balance and better shadow separation. However, I think you have to take Terry's advice into account, which is to say that if they are proofing on an "uncontrolled" inkjet which is not regularly calibrated, your profile wont be very smooth and also might not be valid next week.
