Well, there is a user's guide on the website that you apparently
missed, which includes a spectral graph that shows the Cube to be more
spectrally neutral than the gray Munsel chips in a ColorChecker, or a
Kodak gray card, or even a WhiBal card, though the WhiBal comes in
second.
You are welcome to white balance on the white face if you prefer, but
it's certainly more foolproof to use the gray, since it avoids
spectral clipping. When unclipped the two produce very similar results.

I also disagree with the video where they show White Balancing in LR
using the gray area. Not a good idea, the Adobe team recommends
using a non specular white for WB considering the data Ddstribution
of linear encoded Raw data.
Lastly, while I see such tools being really useful for JPEG capture,
less necessary for Raw. Sure, you can speed up the WB process when
no such white exists in the original. But I've never had an issue
producing a preferable balance when such a target isn't in the
scene. And when they are, I usually find the WB too cool for my
tastes and end up altering the tint or temp slider a tad. Then just
copy and paste the metadata to other similar images.
The BabelColor tile is ideal for targeting the ideal "Expose to the
Right" evaluation since its so very white (L value of 99 is no
exaggeration). Its also a lot easier to carry around. I
