Your reply implies that there are 10bit video card today that will work with
the 10bit internal LUT of Eizo displays on MacOSX through DisplayPort. Could
you tell us, to your knowledge, which 10bit video card available today and
fully supported under the current version of OSX, are capable of such a
feat? I admit my ignorance...

As the others have mentioned, you should be able to connect and drive it, no
problem.
One caveat, which may not affect you, is that you won't be able to drive an
EIZO at 10 bits-per-channel through DisplayPort from the Mini. For that you
will need a Mac Pro with the appropriate graphics card.
DisplayPort has the ability to drive some displays at >8 bits/channel. It's
a cool new development but not without it's limitations...
