Possible explanations:
Instrumentation inaccuracies. Displays often have narrow
peaks, and this can emphasize instrument limitations.
Different viewing conditions. The surround and other aspects
will be different when comparing print to screen, unless you
take some extreme precautions to ensure that they are identical.
Observer variability. Your eyes actual CMF's (color matching functions)
may not match the average observer embodied in the 1931 2 degree curves.
[There was a really interesting paper in last years CIC that hinted that
there might be distinct groupings that most observers fall into. If
this is the case, it might simplify the tailoring of colorimetric
reproduction to suite a particular observer.]
