Is this a serious question? If so, are you talking about the ColorSync Utility or the ColorSync framework? Both ship with MacOSX by default.
I guess you could delete ColorSync Utility just by putting it into the trash and emptying it, but I wouldn't recommend it. It is typically harmless to users who do not know how to work with.
If ColorSync Utility opens specific file types by default maybe you or some application messed things up, most likely unintentionally.
If this happens for a specific document, locate it [the document] in Finder, select and control-click or right-click it and select "Get Info" from the contextual menu or from the File menu; the shortcut cmd-I also works.
In the upcoming Info window/panel locate the "Open with:" section at the bottom, from there you can select another application to open this specific file type by default. Confirm your selection for all documents of this file type using the "Change All…" button.
I do not think you really want to remove the ColorSync framework. Doing so would make your installed MacOSX mostly unusable. I think I did this once just for kicks to see what happens (I actually only renamed it) and AFAIR I was not able to restart the system properly. I had to restore the original filename of the framework manually in Target Disk Mode to get the system working again.
If everything I wrote is not what you asked for, then your question provides not enough meaningful information.
