To add to Roger's excellent reasons, I find it often necessary to edit profiles for cross rendering (make my Epson match a press sheet) where the secondary profile (Epson) needs some specific tweaks to produce a good match.
The scum dot edit I needed to fix a bug in a PROFILER profile was another recent example where a profile had to be used, could not be result with another package but the 1% scum dot in one channel needed a fix.
It's not unusual to want to edit the preview portion of a profile to better produce a soft proof.
I've played with profile editors dating back to ColorBlind Edit. I sure wish we had an easy to use product that had the tools necessary to do fine edits. The Kodak product fit the bill perfectly.
