Actually this doesn't seem to be true.
In the spirit of checking my assumptions, I created a solid color on a 16bit ProPhotoRGB canvas. I created a curve layer above it. In the blue channel, I sampled the solid color to put a control point on the blue channel curve at that location. I then moved it 1 unit down (1/256 th). this changed the color a fraction. In the past I'd have accepted this as the smallest practical size color adjustment I could make, if I were grading a normal photographic image.
Using 'classic color meter' i noted the "before curve" and "after curve screen" Lab values of the solid color.
With the curve on and using the curve opacity slider I was able to obtain various intermediate Lab values between these before curve and after curve values. This might suggest that if a final 'finesse' color adjustment in a very large 16 bit color spaces like ProPhotoRGB is really needed, it might be achieved with an additional curve layer at say 20% opacity. This would effectively allow me to move my ProPhotoRGB pixels a smaller distance in the colorspace than the normal 8 bit resolution of the tools allow.
