For the same reason that you can turn a grizzly bear white with a cartesian transform.

But it points to your answer. Plot the color space in different coordinate systems and observe the different shape. For example, it should be obvious why the CIELab color space is a cube when plotted with L*, a*, and b* for the axes. What shape does it take with X, Y, and Z? Or Y, U, and V?
