I don't see anything wrong, conceptually, with your method.
Wherever you chose to collect the data, you can track it in dE2000 units -- sure.
You could do this using Excel -- one of the best color management utility out there -- or you could write your own software. It's not that hard. I don't think Argyll has anything to help with this...
