The Java example code has two that should be of interest (primarily
MIDIGraph) in /Developer/Examples/CoreAudio/Java
What do you want to "play" in response to the MIDI input - if its turning
your computer into a synthesiser then the DLSMusicDevice (and the MIDIGraph
example) is what you need I think
