there is some preliminary documentation on the apple website:
http://developer.apple.com/audio/pdf/coreaudio.pdf
but it's not a very good starting point

the best documentation availiable is in the headers of the CoreAudio,
AudioUnits and AudioToolbox frameworks (/System/Library/Frameworks)

Also, check out some sample code (/Developer/Examples/CoreAudio) and the
archives of this list (http://www.lists.apple.com/mhonarc/coreaudio-api/)
