Actually a huge growth market right now is MIDI controllers with lots
of knobs and sliders. Most serious audio users (and I think that is
most of the target audience as this kind of
software is not cheap enough for the hobbyist) have obtained or will
obtain a supplementary input device for working with their DAW. A
keyboard and mouse don't cut it for manipulating the software. Now you
could argue that this is a vicious cycle fed by the fact that the
software itself has lots of virtual knobs, but I think it is driven
more by a
need to be able (as Urs and others have mentioned) to twiddle many
different things quickly without have to do the mousing equivalent of
"hunt and peck".
Just like you can't do video work without a camera or serious art work
without a tablet, I don't think you can get the most out of your audio
software without a control surface that mimics the controls on screen.
