I'm trying to write my very first AudioUnit. What are the max and minimum floating point values for a sample of 16-bit audio?

is the range -1.0 to +1.0?

typically, yes...

But, like real world audio, in a complex signal flow (mixers etc.) this range can be exceeded, which causes clipping or the musician has a gain/limiter/compressor in the signal path.

You typically do not clip yourself, say in a filter/EQ plugin. Same as VST, for example.

Cheers,

;) Urs
