If you could save your audio in a compatible file format, you could then
automatically send the file to iTunes via its AppleScript dictionary,
then delete your intermediate file.

This is exactly what I'd like to do! However unlike the QuickTime
SequenceGrabber stuff, I haven't found any sample code for CoreAudio
that shows how to get audio input and save it in a QuickTime-compatible
file.
