But it still shows up in the menu of a stereo track in DP4, and in the mono->stereo menu in Logic. There must be something else involved somewhere...?

The code snippet looks ok, so I think there's maybe some other problem. Did you run auval on your AU? It prints a list of possible I/O configs too. What does it show?
