This definitely appears to be a bit buggy. You should file a bug about the
AMS UI not taking the changes without switching back and forth (I kinda
noticed this as well).

Is this on Mac OS X Tiger? AMS's management with respect to speaker configurations and state-saving has been improved in Mac OS X Tiger. If you believe there are still remaining issues please do file a bug.
