(You won't have any of the third harmonic, so it really will be a pure
sinewave.)
if you amplify & clip in analog domain (no aliasing, d'oh ;-) a sine
wave can easily be turned into something like a square wave...
Optoelectronics might do the trick.
However, I'd get a Pic or Atmel AVR prototyping board and build a MIDI
2 DCS converter. Those microcontrollers are so easily persuaded to
understand Midi, it's a blast. Hehe, you can create your train control
partiture in Logic's Touch Tracks (no pun intended).

Btw.: I got an old Atmel AVR SK100 board here... anybody know a
comfortable way to use it with OS X / G5? Might like to build something
with blinking LEDs...
