Hi Simon,

you'll find some really good and easy to understand example code in your /Developer/Examples/CoreAudio/SimpleSDK/ folder. to get an overview and understand some basic concepts you should probably first read through apple's documentation though: http://developer.apple.com/ documentation/MusicAudio/Reference/CoreAudio/.
there's a nice and simple tutorial for developing audio units:
http://developer.apple.com/audio/audiounits.html.
if you just want to use audio units in your applications I'd recommend you to read the audio unit overview which really gives a deeper introduction to the subject (also located in your developer folder in case you've downloaded the core audio sdk):
