The sample code you want is in /Developer/Examples/CoreAudio/HAL/ HALLab. This is a project that builds an application that puts a GUI on most of the HAL's properties, including most of what you are asking about. For more information, you can look at the info in <CoreAudio/AudioHardware.h>.
