Okay, I stumbled onto the need to create an aggregate device, in the
"Audio and MIDI" app.
And that is the answer to the mystery!
The Intel machines model their hardware devices differently -- as
half-duplex. Thus the "input device" only has an input stream, and
the "output device" only an output stream.
Some apps, such as AU Lab, want you to tell them which device to bind
to, and expect the device to have bi-directional streams.
By rolling your own aggregate device, you present a meta-device to
the clients, which behaves in the expected bi-directional manner.

AU lab 1.0.3
I can't create an input strip, using the builtin hardware device on
this machine. The input side shows up just fine in the "Audio MIDI
Setup" app, just not in AU Lab. In the device setup sheet for a new
document, the input stuff is greyed-out, and the message "Audio
input is not supported" is printed there.
I searched this email list, but didn't find any hints that others
have this problem.
