Right - the converter doesn't do mix downs.
I see the kAudioUnitSubType_StereoMixer subtype for the mixer
component but that seems heavy-handed for what I want to do.
The stereo mixer doesn't do stereo to mono (its output is only stereo).
The matrix mixer will do this.
