Just like William I'd recommend Cocoa.

Indeed, there are some major hosts like Live that still do not support Cocoa views - but it's like a chicken and an egg problem. If there are not enough Cocoa plug-ins (although there are quite some, including mine) then why should the host makers bother to add support for them? But Carbon is getting older and older and we have to move on. Cocoa is a much more modern technology, much easier to deal with than Carbon (no matter if you're a newcomer or know Carbon already). If you do not join the growing number of Cocoa plug-ins, we'll be bound to live in 1990s...
