I assume Apple chose C++ for those examples because at the time of
writing, Carbon was still a reasonable choice for a front end?

For the same reasons Apple chose to write their sample programs in C++
I assume. Actually ObjectiveC++ feels pretty natural.
About C# + Objective-C, I'm not even sure what compiler you'd use
for that ;)
