Should I use QuickTime?

Hi.
I'm starting a project at which I'll need to use audio and video at
the same time, to know what is going on with both the streams. The
goal is to simulate a musician, that has two perception channels: ears
and eyes.
I've a Macbook (not a Pro), and I'm planning to use the build in
iSight as the camera.
I've thought about QuickTime, but haven't worked with it yet.
So i'd like to know what's the easiest way to do that job.
