Yes it possible, and permissible.
There, in fact, is no real limit to the number of channels that can be
represented in a single QuickTime movie track (if you use
SoundDescriptionV2).

a single channel 6 sample, followed by
a single channel 7 sample, followed by
a single channel 8 sample, followed by
the next channel 1 sample, followed by
the next channel 2 sample, etc
All the audio would then correspond to a single track in the
Quicktime wrapper.
Is this permissible?
