I know that MotU Digital Performer 6 supports Cocoa Plug ins, as do
Sound Studio 3 (some Cocoa Plug ins don't appear to be working with
this software though), AudioHijack Pro, TwistedWave, Logic 8, AULab
2+, GarageBand 4+ and the free Prosoniq Cocoa MiniHost that comes with
their plug ins.
Unfortunately, Ableton Live doesn't support Cocoa at this time which
is a shame, since it is otherwise a great app.
